Дисертація на здобуття наукового ступеня кандидата історичних наук зі спеціальності 07.00.07. – історія науки й техніки. – Тернопільський національний педагогічний університет імені Володимира Гнатюка, Тернопіль, 2013. Дисертацію присвячено дослідженню історії становлення та розвитку науково-технічного прогресу у харчовій промисловості українських губерній Російської імперії в другій половині ХІХ – на початку ХХ ст. На основі всебічного аналізу широкого кола архівних матеріалів, статистичних джерел, наукових публікацій в дослідженні зроблено спробу комплексного вивчення чинників формування і розвитку технічного прогресу в українських губерніях досліджуваного періоду. На основании всестороннего анализа широкого круга архивных материалов, статистических источников, научных публикаций в исследовании сделана попытка комплексного изучения факторов формирования и развития технического прогресса в украинских губерниях исследуемого периода. Комплексно исследована материально-техническая база пищевой отрасли, изучен процесс капитализации и политика государства относительно развития пищевой промышленности, очерчено формирование рынков сбыта продукции, проанализированы особенности формирования буржуазии, раскрыты источники формирования технической интеллигенции и промышленных рабочих. The dissertation is devoted to the investigation of history of incipience and the development of the scientific and technical progress of the food industry in Ukrainian provinces of the Russian Empire in the second half of the nineteenth early 20th century. In the given work for the first time in the historiography the development of the technical progress in Ukrainian provinces of the Russian Empire in the second half of the nineteenth early 20th century is thoroughly investigated. The systematic and comparative analysis of the problem in Ukrainian provinces is made. Historiographic survey confirms poor elucidation of the history of incipience and development of the scientific and technical progress in the food industry, urgent need for a comprehensive, critical approach to the study of this problem. One of the most important questions, which historiography puts, is periodization development of stages of branch incipience. Simplified division into pre-October and post-October period existed in the works in the 1960’s years but it most corresponds to ideological dogmata, and is not a consistent reflection of the historical process of the industry incipience. On the basis of comprehensive analysis of large range of archival materials, statistical sources, publications in the investigation an attempt is made to study thoroughly background of the formation and development of the technical progress in the food industry. Despite the historiography of thesis, this problem has not been the subject of independent study. Pointing to the regional particularities of the development of the food industry, the author has made a general analysis of the problem and has objectively studied it. Great attention is paid to the theoretical and methodological basis of the study of the problems, alternative approaches of various scholars to prospects of formation and development of the food industry in Ukrainian provinces of the Russian Empire. The state and the formation of the food industry are analyzed. The attention is focused on the development of such key sectors of the food industry as sugar, distilleries, tobacco, flour. The size of production, which had its own peculiarities, is researched. The formation of the raw materials of the food industry, its dependence on import and feedback with the primary processing of raw materials is analyzed. The material and technical base of the food industry are investigated, in which technological revolution in the country played the main role, which led to the use in the manufacture of steam engines, systems of vehicles, machinery and tools. The respondent has investigated and analyzed main factors, which influenced food market and features of its development, in which trade infrastructure played the main role. The features of formation of a class of entrepreneurs are outlined, staffing industries, resources, and methods of their recruitment are analyzed, sources of technical intelligentsia, industrial workers, conditions of their work and wages are disclosed. The problems of background formation of change of approach to processes, understanding the need for scientific analysis of complex physical and chemical transformations are investigated. The examples illustrate companies that originally went through the continuous updating of equipment, reducing the share of manual labor and those which chose extensive way of development. The development of the food industry in different regions of Ukrainian provinces in the Russian Empire, due to specific historical circumstances is compared. The problem of the relationship of design and product mix with historical realities as products that have a special place in human psychology is analyzed.
