The regular consumption of high quality dairy products produced using probiotic bifidobacteria cultures promotes the normalization of children’s intestinal microbiocenosis and the improvement of children’s immune status. In the present work the regularities were established of fermentation of adapted to milk monocultures B. bifidum 1 + B. longum Я3 + B. infantis 512 in sterilized milk enriched with fructose as bifidogenic factor. The recommendations for the composition of the three strain starter of mixed cultures of bifidobacteria were given: for dairy products for infant food with the highest number of viable cells of all three types of bifidobacteria – B. bifidum 1, B. longum Я3 and B. infantis 512 it was recommended to set the ratio of these cultures in starter composition 1 : 1 : 10, the inoculum concentration of the cultures – 1×105, 1×105 and 1×106 CFU/cm3, respectively. The prospectivity of the use of the developed starter composition of mixed cultures of bifidobacteria in the technology of bifidobacteria containing dairy products for infant food with long shelf life was experimentally proved.
