У роботі розглядаються теоретичні основи поняття якості послуг на підприємствах сфери обслуговування, визначаються методи оцінки якості послуг підприємств ресторанного господарства, розглядається система управління якістю послуг. Зроблено аналіз сучасних стану ринку ресторанних послуг, надано характеристику ресторану «Міміно в Одесі», проведено оцінку якості обслуговування. Пропонуються рекомендації з підвищення якості послуг підприємств ресторанного господарства, розроблено сервісний план для ресторану «Міміно в Одесі» та обґрунтовуються стратегічні напрями підвищення якості обслуговування. The paper considers the theoretical foundations of the concept of quality of services in the service sector enterprises, determines the methods of assessing the quality of services of restaurants enterprises, and considers the system of quality management of services. An analysis of the current state of the market of restaurant services has been made, the characteristic of the restaurant «Mimino in Odessa» has been given, the quality of service has been assessed. Recommendations on improvement of the quality of services of enterprises of the restaurant industry are offered, the service plan for the restaurant «Mimino in Odessa» is developed and the strategic directions of improving the quality of service are substantiated. |
